352 METABOLITES FROM A SLOW FERMENTATION

This is a fermented soy milk concentrate containing 352 distinct metabolites — 235 water-soluble, 117 fat-soluble, including bioactive peptides — produced by 16 species and 35 strains of lactic acid bacteria and bifidobacteria, including B. longum, L. acidophilus, L. rhamnosus and L. casei. The medium is organic, pesticide-free soy milk, cultured at body temperature.

FERMENTATION AS A CRAFT

The Tiba Institute uses a proprietary symbiotic cultivation method in which species cooperate rather than compete — and famously plays the shakuhachi, the traditional bamboo flute, in the culture room during fermentation. Whether or not you believe vibrations move microbes, it captures the philosophy: this is fermentation as a craft, not an assembly line.
